BREWING INSTRUCTIONS
Great " Coppa Aya "
"Coppa Aya" is the Singhalese
word for "Good Cup". The people that pick our tea are Singhalese. All
Kevton tea is Coppa Aya whatever way we package it. Kevton tea
is very light but full bodied and we do not overpower our tea with the
fruit taste. Kevton tea is 100% natural and because of our growing
elevations and pick, our teas are naturally low in caffeine without the
chemical processing used to de-caffeinate other teas. We are sure you will
agree natural is always the best option.

Traditional Hot Tea |
-
Fill a kettle with cool fresh water or bottled spring
water. Hot tap water is stale and de-aerated from standing in hot water
tanks.
-
Bring water to a boil, remove from burner once it
reaches boiling. If the water is not hot enough proper extraction of the
flavor will not occur, but if the water is too hot, boiling too long,
the water will be de-aerated and the tea can scald and taste bitter and
stale.
-
If making tea in the kettle, use one teabag for every
two cups of water, and one for the pot if making a whole potful. One
Kevton teabag is a full leaf tea in a bag and will go further that most
teas.
-
If making a cup, pour your water into the cup.
-
Steep one teabag or teabags for a potful, for 3 to 5
minutes.
-
Remove the teabags.
-
Sweeten the cup or the pot or not.

Ice Tea – One Gallon |
 |
-
Use the same method in numbers 1 and 2 of Traditional
Tea.
-
Put 7 teabags into the kettle with tags hanging out
side.
-
Pour sweetener into the gallon container or pitcher,
or not.
-
Steep the teabags for 5 minutes in the kettle, then
remove and discard teabags.
-
Pour a little plain warm water into pitcher before
adding the hot tea water to container. Mix well if sweetened. This is to
ensure that you do not crack or break the container if glass or ceramic.
-
Fill remaining portion of container with cold or ice.
-
"Icing" the tea is the process of going from
extremely hot to extremely cold and will shock the tea leaves. I prefer
to refrigerate the tea for a few hours, or overnight. This allows the
tea to relax and for the flavor to blossom out.
-
Adding complimenting fresh fruit, or garden mint at
the time of serving makes this a very special treat.
